Instructions
Preheat the Oven
Preheat your oven to 350°F (175°C).
Make the Cookie Dough
In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until combined.
In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Prepare the Filling
In a separate bowl, mix the brown sugar, cornstarch, and cinnamon together. Add the milk slowly while stirring until you have a thick paste.
Shape the Cookies
Roll out the cookie dough on a floured surface to about 1/4 inch thick. Cut into rectangles (about 4x3 inches).
On half of the rectangles, spread about a tablespoon of the filling, leaving a small border around the edges.
Place another rectangle on top of the filled rectangles and press down the edges to seal. Use a fork to crimp the edges if desired.
Bake the Cookies
Place the assembled cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
Make the Frosting
While the cookies are baking, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
Once the cookies are out of the oven, allow them to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Finish with Frosting
Once the cookies are cool, drizzle the frosting over the top and add sprinkles if desired. Let the frosting set before serving.
Notes
These cookies are perfect for sharing, and the recipe can be adjusted for gluten-free options or different fillings. It's essential to avoid overmixing the dough and to let the cookies cool before frosting.
