Ingredients

Chicken and Marinade

  • 1.5 lbs chicken thighs (boneless, skinless)
  • 2 tsp fresh ginger (finely grated)
  • 2 tsp minced garlic
  • 3 tbsp low sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp gochujang
  • Chopped green onions (optional garnish)

Instructions

Preparation

  • Cut the chicken into 1 1/2 inch cubes and toss them into a bowl.
  • In another small bowl, whisk together ginger, garlic, soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang.
  • Pour half of the marinade over the chicken pieces and mix well. Cover the bowl and marinate in the fridge for at least 4 hours or overnight.
  • Reserve the remaining marinade in the fridge for basting.
  • Skewer the marinated chicken pieces.

Grilling

  • Preheat the grill to medium heat.
  • Lightly oil the grill to prevent sticking.
  • Place the skewers on the grill, turning every 3-4 minutes for even cooking, until chicken reaches an internal temperature of 165°F, about 20-30 minutes.
  • Baste the chicken skewers with the reserved marinade during the last few turns of grilling.

Serving

  • Remove the skewers from the grill. Serve with chopped green onions on top, along with your favorite side dishes.

Notes

For the best flavor, do not skip marinating the chicken and ensure the grill is at the right temperature. Wooden skewers should be soaked in water for 30 minutes to prevent burning.
