Instructions
Preparation
Start by cutting the chicken breasts into bite-sized pieces. Chop the onion, and mince the garlic and ginger. Slice the carrots and chop the bell pepper.
Cooking
Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and season them with salt and pepper. Cook until they are browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
In the same pot, add the chopped onion, and cook until it becomes translucent. Add the minced garlic and ginger, sautéing them for an additional minute until fragrant.
Stir in the carrots and bell pepper. Cook for about 3 minutes before adding the chicken broth, soy sauce, and curry powder. Stir well to combine.
Return the browned chicken to the pot. Bring the mixture to a boil, then reduce heat to low. Let it simmer for about 20 minutes or until the chicken is cooked through and the vegetables are tender.
Check for seasoning and adjust salt and pepper if needed.
Serving
Spoon the chicken curry over a bed of cooked Japanese rice. Garnish with green onions or serve with pickled ginger on the side if desired.
